Super Seed Energy Bars



Perfect for breakfast, pre workout or simply with a well deserved cup of coffee ☕️ This is a really versatile recipe where you can swap in and out the dried fruit, nuts and seeds and use up what you have in the cupboard! Top with whatever you fancy... I chose coco nibs :) @hestergaylard

Ingredients
* 300g fine rolled porridge oats
* 80 g plain flour
* 50 g mixed nuts (I used almonds) roughly chopped
* 200 g mixed dried fruit (I used sultanas, apricots and some banana chips) larger pieces roughly chopped
* 100g mixed seeds (I used pumpkin, sunflower and hemp)
* 200 g Nut butter
* 175 g maple syrup
* 200 g light brown soft sugar

Instructions
1. Preheat the oven to 160C/325F/gas mark 3. Grease a 23cm/9in square cake tin and line with baking parchment.
2. Mix together the oats, flour, nuts, fruit and seeds in a large bowl.
3. Place the nut butter , maple syrup and brown sugar in a pan over a low heat. Heat, stirring occasionally, until melted and smooth.
4. Pour the syrup into the oats and stir until thoroughly combined, there should be no dry patches at all.
5. Tip the mixture into the prepared tin, spread it out level and press down firmly until well compacted.
6. Bake for 25-35 minutes until set and golden (they will still be a little soft to the touch and will firm up a lot as they cool).
7. Leave to cool for 10 minutes and then place in the fridge to set for 2 hours.
8. Turn out onto chopping board and cut into slices with a sharp knife . Store in an airtight container for up to 10 days
